INGREDIENTS
  • 2 CUPS ROLLED OATS
  • 1 CUP ALMONDS, CHOPPED
  • 1/2 CUP SUNFLOWER SEEDS
  • 1/2 CUP HONEY OR MAPLE SYRUP
  • 1/2 CUP UNSWEETENED COCONUT FLAKES
  • 1 CUP DRIED BLUEBERRIES
  • 1 TEASPOON CINNAMON
  • 1/4 TEASPOON SALT
  • COOKING SPRAY OR PARCHMENT PAPER FOR BAKING SHEET

SUPER FOOD BLUEBERRY GRANOLA TOPPING

INSTRUCTIONS
  1. PREHEAT YOUR OVEN TO 350°F (175°C) AND LINE A BAKING SHEET WITH PARCHMENT PAPER OR SPRAY IT WITH COOKING SPRAY.
  2. IN A LARGE BOWL, COMBINE THE ROLLED OATS, CHOPPED ALMONDS, SUNFLOWER SEEDS, COCONUT FLAKES, CINNAMON, AND SALT. MIX WELL TO ENSURE EVEN DISTRIBUTION OF THE DRY INGREDIENTS.
  3. DRIZZLE THE HONEY (OR MAPLE SYRUP) OVER THE OAT MIXTURE AND STIR UNTIL ALL INGREDIENTS ARE WELL COATED.
  4. SPREAD THE MIXTURE EVENLY ON THE PREPARED BAKING SHEET. BAKE IN THE PREHEATED OVEN FOR ABOUT 10-12 MINUTES, STIRRING HALFWAY THROUGH TO ENSURE EVEN TOASTING. WATCH CAREFULLY TO AVOID BURNING.
  5. REMOVE FROM OVEN AND LET IT COOL COMPLETELY. ONCE COOLED, STIR IN THE DRIED BLUEBERRIES.
  6. STORE THE GRANOLA IN AN AIRTIGHT CONTAINER AT ROOM TEMPERATURE FOR UP TO 2 WEEKS. USE AS A TOPPING FOR YOGURT, SMOOTHIES, OR ENJOY IT AS A HEALTHY SNACK ON ITS OWN!
