INGREDIENTS
- 2 CUPS PLAIN GREEK YOGURT
- 2 TABLESPOONS HONEY OR MAPLE SYRUP
- 1 TEASPOON VANILLA EXTRACT
- 1 CUP FRESH FRUIT (BERRIES, BANANA SLICES, OR PEACHES)
- 1/4 CUP GRANOLA (OPTIONAL)
- CUPCAKE LINERS OR SMALL PLASTIC CUPS
INSTRUCTIONS
- IN A MEDIUM BOWL, MIX TOGETHER THE GREEK YOGURT, HONEY (OR MAPLE SYRUP), AND VANILLA EXTRACT UNTIL WELL COMBINED. FOLD IN YOUR CHOICE OF FRESH FRUIT, MAKING SURE TO DISTRIBUTE IT EVENLY THROUGHOUT THE YOGURT MIXTURE.
- LINE A MUFFIN TIN WITH CUPCAKE LINERS OR USE SMALL PLASTIC CUPS. SPOON THE YOGURT MIXTURE INTO EACH LINER OR CUP, FILLING THEM ABOUT THREE-QUARTERS FULL. IF DESIRED, SPRINKLE GRANOLA ON TOP OF EACH CUP FOR ADDED CRUNCH.
- PLACE THE MUFFIN TIN OR CUPS IN THE FREEZER AND LET THEM FREEZE FOR AT LEAST 4 HOURS OR UNTIL SOLID. ONCE FROZEN, REMOVE THE CUPS FROM THE FREEZER AND LET THEM SIT AT ROOM TEMPERATURE FOR A FEW MINUTES TO SOFTEN SLIGHTLY BEFORE SERVING.
